I’m a big fan of coconut milk and use it on a daily basis. I mix it up with a protein shake plus Chia seeds after my gym work out as this combination really gives me a feeling of fullness.

Ingredients
- 1/2 packet of DRIED KONYAKU (choose either Noodles or the Rice version)
- 120ml of Coconut milk
- 60ml of unsweetened Almond milk
- 1 tbsp light brown Muscovado sugar
- 1 tbsp Chia seeds
- 1 tsp soya powder
- 1/2 tsp light brown Muscovado sugar
Directions
- Prepare the DRIED KONYAKU as instructed on the packet and drain well
- Put Coconut milk, Almond milk and sugar into a saucepan and bring to the boil and turn off the heat
- Add Chia seeds and DRIED KONYAKU to the saucepan and leave until the DRIED KONYAKU soaks the flavours, at least about 5 minutes and if possible, overnight
- Make the topping: mix Soya powder and Sugar in a small bowl
- Serve onto 2 plates and sprinkle with the topping. Enjoy!
