Greek Inspired Salad

This is a refreshing salad for the hot summer season. The basic is inspired by Greek Salad however I added coriander as I like it so much. Its aromatic flavour combines greatly with feta cheese and chick peas. If the coriander is too strong for you or your family, parsley works as well. There are lots of different nutrients and it is filling as there is Dried Konyaku Rice in it. Perfect as the healthy lunch or a side dish for dinner. Sachie

Ingredients

  • 1/2 packet of DRIED KONYAKU - Rice Style
  • 100g of cooked Chickpeas, drained
  • 100g of Feta Cheese, cut into cubes
  • 3 large Tomatoes, cut into cubes
  • 1/2 Cucumber, deseeded and cut into cubes
  • 1/2 Purple Onion, cut into cubes
  • 30g of Coriander or Parsley, cut into 1cm long
  • 1 Lemon, squeezed
  • 1 tbsp extra virgin Olive Oil
  • 1/2 tsp Salt
  • a pinch of Pepper

Directions

  1. Prepare the DRIED KONYAKU RICE as instructed on the packet
  2. Place all the ingredients and seasoning into a large bowl and mix well
  3. Serve and enjoy!
